Zingy Carrot Salad
This recipe is free of the common eight food allergens: Wheat/Gluten, Eggs, Soy, Milk, Peanuts, Tree Nuts, Fish, Shellfish. It is also free of corn, sugar, and alcohol.
This spicy salad will help cool you down in the summer heat!
Ingredients
6 medium carrots, approximately 3/4 pound
3 tablespoon lime juice
2 tablespoon olive oil
1 tablespoon black currants
1 teaspoon ginger; add another 1/2 teaspoon for extra zing!
1/2 teaspoon curry powder
1/4 teaspoon sea salt
Directions
Wash and grate carrots. Mix remaining ingredients with a wire whisk and pour over carrots. Toss and serve.
