Sweet Potato Comfort Food

This recipe is free of the common eight food allergens: Wheat/Gluten, Eggs, Soy, Milk, Peanuts, Tree Nuts, Fish, Shellfish. It is also free of corn, sugar, and alcohol.

Inherently for our survival, we crave fat, sweet, and salt. Here is a healthy and satisfying way to tame those cravings.

Ingredients
1 extra large or 2 small sweet potatoes
1 medium yellow onion
1/4 cup olive oil 
1 tablespoon ginger, finely minced
1 tablespoon maple syrup
1/4 teaspoon sea salt

Directions
Preheat oven to 350 F. Thinly slice the sweet potato and onion. If using a food processor, use the 4mm blade. Toss with oil, ginger, maple syrup and sea salt. Bake in a covered casserole dish for 45 minutes.

Makes 4 side servings or 2 main courses
