Zingy Carrot Salad

This recipe is free of the common eight food allergens: Wheat/Gluten, Eggs, Soy, Milk, Peanuts, Tree Nuts, Fish, Shellfish. It is also free of corn, sugar, and alcohol.
Put a little zing in your salad with ginger and a hint of curry powder.

Ingredients
6 medium carrots, about 3/4 pounds

3 tablespoons lime juice
2 tablespoons olive oil

1 tablespoon black currants
1-1/2 teaspoons ginger powder
1/2 teaspoon curry powder
1/4 teaspoon salt
Directions
Wash and grate carrots. Mix remaining ingredients and then toss with carrots.


Serves 4-6
