Caliente Cabbage Salad

This recipe is free of the common eight food allergens: Wheat/Gluten, Eggs, Soy, Milk, Peanuts, Tree Nuts, Fish, Shellfish. It is also free of corn, sugar, and alcohol.
A little spice, a little crunch, and a lot of healthy! It’s so delicious you won’t even know it’s good for you.

Ingredients
1 pound purple cabbage, approximately 1/2 small cabbage

1 small carrot
1/2 cup raw pumpkin seeds
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1 teaspoon mustard powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper powder

Directions
Remove the core of the cabbage and slice about 1/8” thick by hand or with food processor. Rinse and drain. Shred the carrot. In a small bowl, mix olive oil, lime juice and spices. Set this dressing aside. Place cabbage, carrots, and pumpkin seeds in a large bowl. Combine with dressing and toss. Let sit 10 minutes for flavors to blend before serving.


Serves 4-6
