Beef Stew
This recipe is free of the common eight food allergens: Wheat/Gluten, Eggs, Soy, Milk, Peanuts, Tree Nuts, Fish, Shellfish. It is also free of corn, sugar, and alcohol.
This hearty stew can be made using our homemade allergen-free beef broth.
Ingredients
2 pounds cubed stew beef
1-1/2 pounds potatoes, approximately 4
1/2 pounds carrots, approximately 3
1 medium yellow onion
3 tablespoons canola oil
1 quart beef broth
1 quart water
1 tablespoons fresh parsley, minced
1 bay leaf
salt and pepper to taste
Directions
Mince and saute onion in olive oil until translucent. Add beef cubes and braise. Slice carrots and cube potatoes. Stir vegetables into pot , adding more oil to prevent sticking if necessary. Saute for a few minutes, then add remaining ingredients. Bring to a boil, reduce to a simmer and cover. Soup is ready when vegetables are soft and meat is thoroughly cooked. Serve and enjoy!
