The eight most common food allergens and sensitivities are wheat/gluten, soy, eggs, milk/dairy, peanuts, tree nuts, fish and shellfish. You may be eating these foods, and not associate any health problems with them. Not everyone who is allergic or sensitive to a particular food, such as peanuts, has an anaphylactic reaction upon ingestion. Subtle symptoms such as indigestion, skin rashes, and fatigue are a few, among many, which may occur.
A good deal of wonderful products are available to accommodate those with a single allergy or food sensitivity. Yet sometimes more than one allergy or sensitivity can occur in the same person. Furthermore, a family may have two or more members with different allergies or food sensitivities. Prepackaged mixes for cakes, breads, etc., often require one or more added ingredients which are one of the allergens mentioned above. Using substitutes for such ingredients often leads to an undesirable change in the final taste. As a Licensed Acupuncturist, a Certified Nutritional Counselor, an adventurous cook, and a foodie, I embarked on this project to share my professional knowledge, personal experience, and recipes with anyone who has food allergies, food sensitivities, or Celiac Disease. All recipes have been tested and photographed in my home kitchen. Those without allergies or sensitivities have also been know to rave about the food prepared from these recipes.
